Couscous Salad

One of my favourite blogs to follow is These girls are great! They always have such delicious recipes and great fitness tips. What I love most is that even though all their recipes are not for vegetarians, it’s really simple to substitute and make them veggie friendly. Here is one of my recent faves that I cannot get enough of:


  • 1/4 cup whole wheat couscous
  • 1 tbs olive oil
  • 1/2 tsp sea salt
  • 1/4 cup carrot, sliced
  • 1/4 cucumber, sliced
  • 1/4 cherry tomatoes, halved


In a sauce pan combine 1/4 cup water, olive oil and salt. Bring to a boil. Remove from heat and pour in couscous. Stir thoroughly and cover. Let stand for five minutes. Fluff with a fork and add vegetables. Stir and serve.

….so simple!
